So my cousin is in India. She keeps visiting once in every two years. Have to admit that she is a super woman. A chef, beautician, mechanic, doctor. Basically, she dons most of the hats.
I decided to make the most of it when she visited my place. She makes super yummy restaurant style pav-bhaji. Trust me, it’s no less.
So here goes the super easy process of making the most tasty pav bahji that I have ever had.
Ingredients
Potatoes – 300 gms
Onions – 250 gms
Simla Mirchi (Capsicum) – 250 gms
Cauliflower – 250 gms
Cabbage – 250 gms
Tomatoes – 300 gms
Green peas – 250 gms
Coriander – a bunch
Garlic cloves – 8-9
1 Lemon
Everest Pan bhaji masla & Kashmiri mirchi powder
Hing (asafoetida) – a pinch
Salt – as per taste
Chop all the vegetables separately.
Pressure cook all the veggeis except onions, tomatoes, capsicum.
On the other side, blend the tomatoes, half of the coriander & garlic.
In a pan, add generous amount of oil & one tbspoon butter. Now add the blended stuff and let it cook for around 30 mins. Add 2 fistful of capsicum at this stage.
Now add pav bhaji masala & kashmiri mirchi powder and let it cook for another 10 mins.
Once all the masalas have cooked add the cooked veggies & smash them with a smasher. Now add the rest of the capsicum
Imp – when the bhaji cools down add lemon juice as per your taste.
Done, bhaji is ready to be served with a dollop of butter & coriander. Do not forget to serve lemon & onion at the side.
Restaurant style pav bhaji is ready to be devoured.
